Litti Chokha, the famous dish of Bihar, is popular everywhere, but curry made of colocasia leaves is no less.

Ingredients for Arabic leaves dish

Arabic leaves – 8-10

Gram flour – 1 cup

Turmeric – 1/2 tsp

Cumin – 1/2 tsp

Ajwain – 1/4 tsp

Coriander powder – 1 tsp

Red chili powder – 1 tsp 1 tsp

Green coriander – 2-3 tbsp

Green chili-ginger paste – 1 tsp Dry

mango – 1/2 tsp

Garam masala – 1/2 tsp

Oil – as required

Salt – as per taste

Method of preparation of colocasia leaves dish

To make colocasia leaves recipe, first take colocasia leaves and separate their stems by breaking them. After this wash the leaves thoroughly with water. Now take a mixing bowl and add gram flour and all other spices and mix it well. After this, add salt as per taste to the mixture and prepare a thick solution of gram flour by adding water little by little. Keep in mind that the solution should not remain thin.

Now take a plate and keep it upside down on a flat place. After this, place a leaf of Arabic on it. Now pour the prepared gram flour batter on the leaf and spread it evenly. Put another colocasia leaf on it and also put a layer of gram flour batter on it. Similarly, keeping four-five leaves one above the other, apply a layer of gram flour solution. After this, first fold the leaves inwards from both the sides and then after that prepare their roll.

Tie the roll well at three or four places with a thick thread so that the roll does not open. Now take a vessel and put water in it and keep it for boiling. Place a strainer on top of the utensil and put all the prepared rolls on top of it and cover the strainer from above. So that the rolls can cook properly with the steam of water. Cook them for at least 20 minutes. If you want, instead of steam, you can cook the leaves by putting them directly in water. Keep in mind that colocasia leaves should not remain raw at all.

When the leaves become soft, turn off the gas and cut the roll into small pieces with the help of a knife. Now put oil in a pan and heat it on medium flame. When the oil becomes hot, put the chopped pieces in it and deep fry until they turn golden in color and become crispy. After this turn off the gas. Now serve this dish with chutney or tomato sauce.
