Separate the stalks of spinach leaves and dip them in water and wash them thoroughly 2-3 times. Keep the washed spinach in a sieve or on a plate diagonally. This will remove the extra water trapped between the leaves. After this finely chop the spinach.

Cut tomatoes into big pieces. Remove the stalks of green chillies, peel and wash ginger. Put all the ingredients in the mixer and make a paste out of them.

Put 1 tbsp oil in a pan and heat it. Add asafoetida and cumin seeds to the hot oil. When cumin seeds crackle, add turmeric powder and tomato-ginger-green chili paste. Fry this paste till oil starts separating from it.

Add chopped spinach, salt to the roasted spices and mix well. Cover the vegetable and let it cook on medium flame for 2 to 3 minutes. If some water comes out from the spinach leaves in the vegetable. So increase the flame and cook the spinach uncovered till the water dries up.
